A Dan Dan Noodles recipe that&#x27;s tried, true, and authentic. With this recipe, you can try out this spicy, numbing Sichuan classic at home!

To make the chili oil: In a small pot, add the Sichuan peppercorns, cinnamon stick, star anise, and oil. Over medium low heat, slowly heat to 325 degrees, and then turn off the heat. Wait 6 - 7 minutes, then remove the peppercorns, cinnamon stick, and star anise with a slotted spoon. Add the crushed red pepper flakes and allow them to steep in the hot oil. It should start smelling fragrant, almost like popcorn. Allow the oil to cool. This makes more chili oil than you’ll need, but you’ll be glad to have it on hand for use in other dishes. Store in a glass jar and keep refrigerated.

To make the meat mixture: In a wok, heat a teaspoon of oil over medium heat, and brown the ground pork. Add the sweet bean sauce, shaoxing wine, dark soy sauce, and five spice powder. Cook until all the liquid is evaporated. Set aside. Heat the other 2 teaspoons of oil in the wok over medium heat, and sautee the sui mi ya cai (pickled vegetables) for a few minutes. Set aside.

To make the sauce: Mix together all the sauce ingredients. Taste and adjust seasoning if you like. You can loosen it with more hot water, add more Sichuan peppercorn powder, etc.

To prepare the noodles and veggies: Cook the noodles according to package directions and drain. Blanch the greens in the noodle water, and drain.

Divide the sauce among six bowls (or four if you want larger servings), followed by the noodles and the leafy greens. Add the cooked pork and sui mi ya cai over the top. Sprinkle with chopped peanuts (optional) and scallions.

Mix everything together and enjoy!

Very nice recipe but it would be useful to get an option to see quantities in metric. Old school Imperial measurements may as well be in ancient Greek to everyone in the world who isn't American.

This hit the pregnancy craving for spicy noodles perfectly.

I ordered the sumimiyachi on Amazon and picked up the shaoxing wine at 99 Ranch. Used a 3 pack of fresh ramen noodles from 99 and crumbled a block of firm tofu into a pan with oil and fried it lightly brown before adding the soy sauce, 5 spice etc… we turned 6 servings into 3 and had a huge yummy dinner. :) Thank you for this recipe!

Great recipe I did double it so had to play with the sauce and make more as it did not compute correctly. The wife made me serve it again the next day.

I have substituted with the same weight of extra firm tofu. I crumble finely by hand into a bowl, then stir in the hoisin, 5 spice etc before adding to a hot pan . I find if I turn the heat higher and let it sit for a bit I get some browning, so I do that a few times until it has the texture I'm looking for.

I feel I've been deprived my entire 65 years on this earth. Never aware of this dish, until a client(who lived in Singapore for a few years) told me about Dan-Dan Noodles. I found 
 this recipe online and followed it to the "T." I had a lot of the ingredients already, but headed to the Asian market to fill the voids. AMAZING!!!

I just learned that it’s actually the Hong Kong version of this recipe that includes tahini, whereas the original Sichuan version does not. Would you be willing to create a Sichuan version of this recipe? Thank you so much!
